BeetRoot Pachadi /BeetRoot Yoghurt Curry

 






Ingredients


Beetroot-2 medium size

Warm Water-3/4 cup

Cumin seeds-1/4 tsp

Green chili-3-4

ginger -3/4 inch piece

Curd-3/4 cup

Grated Coconut-1/2 cup

Salt to taste

Turmeric powder-1/4tsp

Shallots-3-4

for seasoning

Coconut oil- 3/4tbsp

mustard seeds-1 tsp

Curry leaves-2 sprig


Method

Grate beetroot. In a  pan add  beetroot ,warm water, and the required amount of salt, and cook till it is done.

In a mixer grinder jar , add all the other ingredients along with grated coconut.

Grind it to a smooth paste.add it to the cooked beetroot and cook again for 2-3 minutes on a medium flame.

After bringing it to room temperature add curd and add  more salt if required.

heat coconut oil in a pan. Splutter mustard seeds and curry leaves

Add it to the beetroot curd mixture.

Serve it with Rice
