Plum Cake

 Ingredients





Mixed fruits- 2 1/2 cups

orange juice for soaking mixed dry fruits



For caramel

1/2 cup sugar

1 table spoon warm water



(For caramel preparation

combine 1/2 cup sugar and 1 tbspn water in a steel vessel.heat it and let the sugar melt

when the color of the sugar become golden brown, remove the vessel from fire,

and add 1/4 cup water to this.

you need to careful at this stage



Bring it back to heat and boil for a few more minutes ( 3- 4 mins)

Remove from fire and let it cool completely.you can prepare the caramel in advance and refrigerate it



 For cake

all purpose flour-2 cups

Baking powder 1 1/4 tspn

baking soda- 1/2tspn

3/4 cup +1/2 tbspn sugar

250gms unsalted butter

(at room temperature)

eggs 4

1 1/3 tspn vanilla essence



 For spice 

 cloves 5

cardamom4

cinnamon- a small size piece



Method



Soak dry fruits

Prepare caramel syrup

Grind all the spices with a pinch of sugar to a fine powder and keep it aside

preheat the oven At 180 degree for 15 mins before baking

Drain the soaked fruits amd keep aside

Toss the drained fruits in 2tspn of flour

sift the flour with baking powder, baking soda and powdered spices with sugar and keep aside

Beat the Eggs and vanilla essence 

add the powdered sugar little by little at atime and beat everything

.Beat after each addition

Add the softened butter which is in room temperature



Fold in the beater egg ,sifted flour, amd soaked fruits and 4 tbspn of orange juice

grease the baking mould and line with a parchment paper

bake in the preheated oven for 1 and 10 mins

the baking time can vary
